Emmentaler is probably the cheese copied most often around the world. But only the Swiss original is truly matured in the cheese cellar for 120 days, does not contain any additives and is a traditional artisan cheese produced using fresh milk from cows enjoying lots of space to roam. All of these are reasons that contribute to the cheese becoming a tasty Emmentaler AOC.

In order for you to identify a real Emmentaler AOC at first glance, the rind of the cheese contains the dairy number of the cheese maker who produced the cheese. Incidentally, each Emmentaler AOC can be traced back to its origin and place of production thanks to its dairy number.  During purchase, also make sure that the correct Emmentaler logo is printed on the packaging: The one with the small round Swiss cross (AOC seal of quality) in front of the lettering. If this seal is missing, the cheese could be an imitation or falsification.
