Wasser, Zucker und Zitronensaft aufkochen. Aprikosen beif\u00fcgen, zugedeckt bei kleiner Hitze knapp weich garen. Zugedeckt ausk\u00fchlen lassen.\r\n\r\nEier aufschlagen, mit Milch verquirlen. Leicht w\u00fcrzen. Kurz vor dem Servieren die Brotscheiben beidseitig in der Eiermilch wenden, so dass sie die Fl\u00fcssigkeit richtig aufsaugen.\r\n\r\nEine grosse beschichtete Pfanne mit Bratbutter bestreichen und erhitzen. Pro Scheibe Brot ca. \u00bc vom K\u00e4se auf den Pfannenboden geben, eine Brotscheibe darauflegen, bei mittlerer Hitze braten. Mit \u00bc des Emmentaler AOP bestreuen. Sobald die Unterseite goldgelb gebraten ist, wenden.
