Trauben halbieren, Wacholderbeeren grob hacken.\r\n\r\nF\u00fcr die Sauce Butter in einer kleinen Pfanne schmelzen, Trauben und Wacholderbeeren darin kurz d\u00fcnsten. Mit Sherry abl\u00f6schen und etwas einkochen. Maisst\u00e4rke im Rindsfond anr\u00fchren, zur Sauce geben, unter R\u00fchren 1-2 Minuten kochen. Thymian vom Stiel streifen, zuf\u00fcgen und Sauce mit Salz und Pfeffer w\u00fcrzen.\r\n\r\nBratbutter erhitzen. Rindssteak mit Salz und Pfeffer w\u00fcrzen, bei guter Hitze anbraten. Die erste Seite ca. 30 Sekunden, die zweite ca. 1 Minute. Pfanne von der Herdplatte wegziehen, Hitze stark reduzieren. Steaks mit K\u00e4sescheiben belegen, dabei darauf achten, dass die k\u00fcrzer gebratene Seite unten liegt. Pfanne zudecken und Steaks in 3-5 Minuten fertig garen.
