Fr\u00fchlingszwiebel und Petersilie fein hacken. Limettensaft, \u00d6l, 2 Essl\u00f6ffel Wasser, Salz und Pfeffer zu einer Sauce verr\u00fchren, mit R\u00fcebli, Fr\u00fchlingszwiebeln und Petersilie mischen.\r\n\r\nErbsen mit Bouillon und Knoblauchzehen zugedeckt 5-10 Minuten weich garen. Erbsen und 2-3 Essl\u00f6ffel Gem\u00fcsefond mit dem Stabmixer nicht zu fein p\u00fcrieren, etwas ausk\u00fchlen lassen. Emmentaler AOP an einer groben Raffel reiben, unter die Erbsen mischen, mit Salz und Pfeffer abschmecken.\r\n\r\nErbsenmischung gleichm\u00e4ssig auf Tortillah\u00e4lften streichen, dabei ca. 1,5 cm Rand frei lassen. Tortillas zusammenklappen, in einer Bratpfanne von beiden Seiten je 2-3 Minuten braten.
