In viel kochendem Salzwasser 5 Minuten blanchieren. In ein Sieb giessen und mit kaltem Wasser abschrecken. Federkohl leicht ausdr\u00fccken.\r\n\r\nKartoffeln sch\u00e4len, in 5 mm d\u00fcnne Scheiben schneiden, in kochendem Salzwasser ca. 5 Minuten knapp weich garen. Birnen sch\u00e4len, in Spalten schneiden. Kartoffeln und Birne in eine Gratinform geben, Federkohl darauf verteilen.\r\n\r\nEmmentaler AOP fein reiben. Eier mit Milch, Quark, Senf und 100 g K\u00e4se verquirlen. Mit Salz und Pfeffer w\u00fcrzen, \u00fcber den Federkohl giessen. Im 180 Grad heissen Ofen 15 Minuten backen.\r\n\r\nBaumn\u00fcsse grob hacken, mit restlichem K\u00e4se vermischen, auf dem Gratin verteilen.
