L\u00e4ngs halbieren, mit Zitronensaft bestreichen. Emmentaler AOP, Brotbr\u00f6smeli, Petersilie und Zitronenschale mischen. Eier und Salz in einem Suppenteller verquirlen, Mehl in eine Schale geben.\r\n\r\nKurz vor dem Servieren Fenchel erst im Mehl, dann im Ei und anschliessend im Emmentaler-AOP-Gemisch panieren. Gut andr\u00fccken. Auf ein mit Backpapier belegtes Blech geben, mit Bratbutter betr\u00e4ufeln. In der Mitte des auf 170 Grad vorgeheizten Backofens 30 Minuten backen. Oder in einer grossen beschichteten Pfanne Bratbutter erhitzen. Fenchel bei mittlerer Hitze unter Wenden goldbraun braten.\r\n\r\nMit Zitronenschnitzen servieren.\r\n\r\nTipp: Bei Saisonanfang im Fr\u00fchling ist Fenchel sehr zart. Dann kann man ihn roh panieren.
