Einzelne Lauchstreifen voneinander l\u00f6sen. In viel kochendem Salzwasser 1-2 Minuten blanchieren. Mit einer Schaumkelle herausheben und in eiskaltem Wasser abschrecken. Portionenf\u00f6rmchen (ca. 3,5 dl Inhalt) mit Butter einfetten und mit abgetropften Lauchstreifen auslegen.\r\n\r\nR\u00fcebli auf der R\u00f6stiraffel reiben. Wirz in d\u00fcnne Streifen schneiden. \u00d6l erhitzen und Gem\u00fcse darin and\u00fcnsten. Bouillon dazugiessen und knackig garen. Etwas ausk\u00fchlen lassen.\r\n\r\nPetersilie fein schneiden. Emmentaler fein reiben. Eier verquirlen und mit Milch, Petersilie und K\u00e4se mischen. Knoblauchzehen dazupressen. Mit Muskatnuss, Salz und Pfeffer w\u00fcrzen.\r\n\r\nGem\u00fcse und Guss mischen und in die F\u00f6rmchen f\u00fcllen. In der Mitte des 200 Grad heissen Ofens 30-40 Minuten backen, evtl. mit Alufolie abdecken.\r\n\r\nK\u00f6pfchen aus den F\u00f6rmchen l\u00f6sen und auf Tellern anrichten.
