In leicht gesalzenem Wasser 5 Minuten garen. Abgiessen und kalt abschrecken. Emmentaler AOP fein reiben. Abgetropfte Fr\u00fchlingszwiebeln und K\u00e4se mit dem Stabmixer fein p\u00fcrieren, mit Salz und Pfeffer abschmecken.\r\n\r\nRollbraten auslegen, zuerst mit Senf, dann mit Fr\u00fchlingszwiebelp\u00fcree bestreichen. Aufrollen und mit K\u00fcchenschnur binden, mit Salz und Pfeffer w\u00fcrzen.\r\n\r\nR\u00fcebli und Kohlrabi in St\u00fccke schneiden. \u00d6l in einem Br\u00e4ter erhitzen, Rollbraten und Gem\u00fcse leicht anbraten. Mit Weisswein abl\u00f6schen. In der Mitte des 160 Grad heissen Ofen ca. 1 \u00bd Stunden braten. Ab und zu mit Wein begiessen.\r\n\r\nFl\u00fcssigkeit in eine Pfanne umgiessen, bei grosser Hitze auf die H\u00e4lfte einkochen. Butter mit dem Stabmixer daruntermischen.
