Zugedeckt knapp weich garen, ausk\u00fchlen lassen.\r\n\r\n\u00dcbriges Gem\u00fcse und Schalotte klein w\u00fcrfeln. In restlicher Butter anbraten, mit Weisswein abl\u00f6schen. Bei guter Hitze auf die H\u00e4lfte einkochen lassen. Rahm zuf\u00fcgen, aufkochen, mit Senf, Salz und Pfeffer w\u00fcrzen.\r\n\r\nGem\u00fcse auf die K\u00e4sescheiben verteilen und aufrollen. Fleisch w\u00fcrzen, K\u00e4ser\u00f6llchen auf die Pl\u00e4tzchen legen, einwickeln und mit K\u00fcchenschnur binden. R\u00f6llchen in der heissen Bratbutter bei mittlerer Hitze rundum 7-10 Minuten braten.\r\n\r\nSauce nochmals kurz erhitzen. Schnittlauch fein schneiden und zuf\u00fcgen.
