Lauch in feine Ringe schneiden. Sellerie und R\u00fcebli sch\u00e4len und klein w\u00fcrfeln. Zwiebel fein hacken. Champignons in 5 mm dicke Scheiben schneiden. \u00d6l in einer grossen Bratpfanne erhitzen. Champignons bei guter Hitze anbraten. Gem\u00fcse und abgetropfte Steinpilze zuf\u00fcgen und alles bei mittlerer Hitze 5 Minuten d\u00fcnsten. Tomatenp\u00fcree kurz mitd\u00fcnsten und mit Bouillon abl\u00f6schen. Thymian zuf\u00fcgen und 5-7 Minuten k\u00f6cheln.\r\n\r\nEmmentaler AOP fein reiben. Mehl, Backpulver, Salz in eine Sch\u00fcssel geben. Butter in kleinen St\u00fccken dazuschneiden. Alles zwischen den H\u00e4nden zu einer kr\u00fcmeligen Mischung verreiben. 120 g geriebener Emmentaler AOP daruntermischen. Eier mit Milch verquirlen, zuf\u00fcgen und alles zu einem weichen Teig verr\u00fchren.\r\n\r\nPilzragout in eine weite Auflaufform geben.
