K\u00f6rner mit einem Messer von den Kolben schneiden, dies ergibt ca. 500 g K\u00f6rner. Bouillon mit den Maisk\u00f6rner aufkochen, 20 Minuten zugedeckt k\u00f6cheln. Alles m\u00f6glichst fein p\u00fcrieren. Maisgriess zuf\u00fcgen, weitere 10 Minuten k\u00f6cheln, \u00f6fters umr\u00fchren. Emmentaler AOP daruntermischen, mit Salz und Pfeffer abschmecken.\r\n\r\nW\u00e4hrend die Polenta kocht, Peperoni halbieren, entkernen und in etwa 1 cm breite Streifen schneiden. Zwiebel halbieren und in feine Streifen schneiden. Knoblauch fein hacken. Oliven\u00f6l leicht erhitzen. Peperoni, Zwiebel und Knoblauch darin and\u00fcnsten, mit Salz und Pfeffer w\u00fcrzen. Zugedeckt 15 Minuten garen. Tomaten in W\u00fcrfel schneiden, mit 1 dl Wasser zuf\u00fcgen und in 10 Minuten fertig garen. Balsamicoessig zuf\u00fcgen und abschmecken.
