Emmentaler AOP in 1 cm kleine W\u00fcrfel schneiden.\r\n\r\nBlattspinat in viel kochendes Salzwasser geben. Sobald der Spinat zusammenf\u00e4llt, in ein Sieb giessen und kalt abschrecken.\r\n\r\nPilze halbieren oder vierteln. Zwiebel fein hacken. Oliven\u00f6l erhitzen, Pilze darin anbraten und mit Sherry abl\u00f6schen. 10 Minuten k\u00f6cheln, bis fast alle Fl\u00fcssigkeit eingekocht ist. Spinat etwas ausdr\u00fccken und unter die Pilze mischen. Bouillon zuf\u00fcgen und kurz erhitzen. Mit Salz, Pfeffer und Muskatnuss abschmecken.\r\n\r\nGut die H\u00e4lfte der K\u00e4sew\u00fcrfel unter die Polenta r\u00fchren.
