Zwiebel und Knoblauch fein hacken. \u00d6l erhitzen, Sellerie, Zwiebel und Knoblauch darin and\u00fcnsten. Reis zuf\u00fcgen, d\u00fcnsten bis er glasig ist. Bouillon unter gelegentlichem R\u00fchren nach und nach dazugiessen, etwa 20 Minuten k\u00f6cheln.\r\n\r\nW\u00e4hrend der Reis kocht, Pinienkerne in einer Pfanne goldbraun r\u00f6sten. Die Schale von einer Orange d\u00fcnn abreiben. Von beiden Orangen die Schale mit einem Messer bis aufs Fruchtfleisch wegschneiden. Einzelne Filets zwischen den Trennh\u00e4uten herausl\u00f6sen. Emmentaler AOP fein reiben. Pinienkerne, Orangenfilets, Rucola und Emmentaler AOP unter den Reis r\u00fchren.
