Stangensellerie in 5 mm d\u00fcnne Scheiben schneiden. \u00d6l erhitzen, Schalotte und Knoblauch kurz darin d\u00fcnsten. Reis zuf\u00fcgen und glasig d\u00fcnsten, mit Rotwein abl\u00f6schen, eink\u00f6cheln lassen. Bouillon unter gelegentlichem R\u00fchren nach und nach dazugiessen, etwa 20 Minuten k\u00f6cheln. Stangensellerie in den letzten 5 Minuten mitk\u00f6cheln.\r\n\r\nEmmentaler AOP in etwa 7 mm kleine W\u00fcrfel schneiden. Radicchio vierteln, Strunk entfernen und in Streifen schneiden. Zucker in einer Bratpfanne karamellisieren. Zitronensaft und ca. 0,5 dl Wasser beif\u00fcgen, k\u00f6cheln bis sich der Karamell aufgel\u00f6st hat.
