Spargeln im unteren Drittel sch\u00e4len, dann in ca. 3 cm lange St\u00fccke schneiden. Spargeln in der Bouillon zugedeckt bei schwacher Hitze ca. 10 Minuten weich garen.\r\n\r\nPastetlideckel l\u00f6sen. Pastetli und Deckel auf ein Blech legen. In den kalten Ofen schieben und auf 180 Grad aufheizen (Unter-Oberhitze oder 160 Grad Umluft). ca. 10 Minuten backen.\r\n\r\nIn der Zwischenzeit Spargeln in ein Sieb geben, dabei den Sud auffangen. Etwa ein Drittel der Spargelst\u00fccke (m\u00f6glichst die unteren Spargeldrittel) mit Frischk\u00e4se, Apfelwein und Emmentaler AOP p\u00fcrieren. Mit Spargelsud zu einer dickfl\u00fcssigen Sauce verd\u00fcnnen.\r\n\r\nP\u00fcree unter R\u00fchren aufkochen, mit Salz und Pfeffer abschmecken. Restliche Spargelst\u00fccke zuf\u00fcgen, kurz erw\u00e4rmen.
