Blumenkohl zerkleinern und im Blender zu Blumenkohlreis verarbeiten. In einer grossen Sch\u00fcssel Blumenkohlreis, Eier, Emmentaler AOP, Mandelmehl und Kokosmehl vermischen. Backpulver, italienische Kr\u00e4utermischung und Salz beigeben. Backblech mit Backtrennpapier auslegen. Darauf mit der Masse 8 Kugeln formen und vorsichtig flachdr\u00fccken, ca. 2 cm dick und 7 cm Durchmesser. Die Rondellen sollten kompakt bleiben. Mit Sesam bestreuen und im vorgeheizten Ofen backen. Nach 20 - 25 Minuten Backzeit aus dem Ofen nehmen und abk\u00fchlen lassen. Buns mit Emmentaler AOP Scheiben und je \u00bc Feige belegen.
