Die Alufolie an mehreren Stellen einstechen und die Kartoffeln im Ofen bei 200\u00b0 ca. 50-60 Minuten lang garen.\r\n\r\nIn der Zwischenzeit die Sauce zubereiten; dazu den Saft einer halben Zitrone mit der Mascarpone mischen und 100 g geriebenen oder fein zerkleinerten Emmentaler AOP, die gemahlenen N\u00fcsse sowie den kleingeschnittenen Schnittlauch hinzuf\u00fcgen und mit Salz abschmecken.\r\n\r\nWenn die Kartoffeln gar sind, die Folie \u00f6ffnen, die Schale einschneiden, und das Innere der Kartoffel mit dem Messer etwas zerdr\u00fccken. Anschliessend eine Vertiefung bilden und einen grossen L\u00f6ffel Sauce hineingeben.
