Abgiessen, sobald der Reis gar ist, und einige Minuten unter laufendem Wasser abk\u00fchlen. Von den Tomaten einen Deckel abschneiden, sie sorgf\u00e4ltig aush\u00f6hlen, das entfernte Fruchtfleisch in W\u00fcrfel schneiden und beiseitestellen. In einer Sch\u00fcssel den Reis mit den Oliven, den Kapern, den klein gew\u00fcrfelten Cherry-Tomaten und dem Fruchtfleisch der Ochsenherztomaten mischen; mit dem \u00d6l und etwas abgeriebener Zitronenschale w\u00fcrzen und sorgf\u00e4ltig mischen. Die gehackte Pfefferminze und 100 g klein gew\u00fcrfelten Emmentaler AOP beigeben. Mit Salz abschmecken und den fertigen Reis in die Tomaten f\u00fcllen. Zuletzt mit einigen W\u00fcrfeln Emmentaler AOP und den Kapern\u00e4pfeln dekorieren.
