Die Fr\u00fchlingszwiebel in feine Ringe schneiden und in zwei Essl\u00f6ffeln \u00d6l anbraten. Nach einigen Minuten die Erbsen beigeben.\r\nMit einem halben Glas lauwarmem Wasser abl\u00f6schen und auf kleinem Feuer k\u00f6cheln, bis sie gar sind. Mit Salz abschmecken.\r\nVier Essl\u00f6ffel Erbsen beiseitestellen, den Rest mit dem Stabmixer p\u00fcrieren.\r\nDie Karotten sch\u00e4len und in feine Scheiben schneiden. In einer kleinen Pfanne 50 ml Extravergine-Oliven\u00f6l erhitzen und die Karotten darin frittieren.\r\nDen Emmentaler AOP in kleine W\u00fcrfel schneiden.\r\nDie Teigwaren kochen und abgiessen, kurz unter kaltem Wasser abschrecken.
