Anschliessend mit Paprikapulver, Salz und Pfeffer w\u00fcrzen.\r\n\r\nDas Toastbrot im 180\u00b0C heissen Ofen toasten.\r\n\r\nMayonnaise, Creme fraiche und Zitronensaft mischen und mit Salz und Pfeffer abschmecken.\r\n\r\nSpeckstreifen in einer Pfanne ohne \u00d6l knusprig anbraten und beiseitestellen.\r\n\r\nAnschliessend die Pouletbr\u00fcstli im Speckfett ca. 5 min anbraten. Wenn das ausgelassene Fett nicht reicht, einfach zus\u00e4tzlich etwas \u00d6l in die Pfanne geben. Die Pouletbr\u00fcstli quer halbieren und mit dem Speck warmhalten.\r\n\r\nSpiegeleier in der Pfanne braten, wenden und fertig braten. Herausnehmen und kurz warm halten.\r\n\r\n<span style=\"font-weight: 400;\">Das erste Toastbrot mit Sauce bestreichen, Salat, Avocado, Zwiebeln, Spiegelei und <\/span><span style=\"font-weight: 400;\">Emmentaler AOP darauflegen. Das mittlere Toastbrot beidseitig mit Sauce bestreichen und auf das Sandwich legen.
