Das Mehl in eine Sch\u00fcssel sieben, anschliessend Eier und Spinat-Quark P\u00fcree beigeben. Mit Salz und Muskat w\u00fcrzen. Die Masse mit einer Kelle mischen und so lange klopfen, bis der Teig Blasen wirft. Nun den Teig zugedeckt bei Raumtemperatur ca. 20 min gehen lassen.\r\n\r\nIn einem grossen Topf Wasser zum Sieden bringen und salzen. Den Teig portionsweise in ein Kn\u00f6pflisieb f\u00fcllen und Kn\u00f6pfli durchstreichen, sodass sie ins Wasser fallen. Sobald die Kn\u00f6pfli an der Wasseroberfl\u00e4che schwimmen, diese herausfischen und in eine Sch\u00fcssel mit etwas Butter geben und warm stellen. Mit dem restlichen Teig so weiter verfahren, bis er g\u00e4nzlich aufgebracht ist.  \r\n\r\nDie Speckw\u00fcrfel in einer Pfanne ohne \u00d6l kurz anbraten und beiseitestellen. \r\n\r\nKn\u00f6pfli in einer Pfanne mit der Butter schwenken, Emmentaler und Rahm dazugeben und die Speckw\u00fcrfeli daruntermischen. Wenn der K\u00e4se geschmolzen ist den frischen Spinat unterheben.
