Zusammen mit den in kleine W\u00fcrfelchen geschnittenem Gem\u00fcse, Knoblauch und Senfk\u00f6rner im Rotwein 12-24 Stunden im K\u00fchlschrank beizen. Die Pouletteile herausnehmen, trockentupfen, salzen, einmehlen und in Oliven\u00f6l kurz und stark anbraten. Poulet aus Pfanne herausnehmen.\r\n\r\nGem\u00fcse aus Wein sieben, im Brat\u00f6l vom Poulet anbraten, mit dem Tomatenmark anr\u00f6sten. Mit einem Drittel des Weins abl\u00f6schen, einkochen bis das Gem\u00fcse \u00abanhockt\u00bb. Diesen Vorgang noch zweimal wiederholen (das ist etwas aufw\u00e4ndig, lohnt sich aber geschmacklich!).\r\n\r\nPoulet, Champignon, Rosmarin, Lorbeer und Nelken dazu geben und mit kalter H\u00fchnerbouillon aufgiessen, bis alles knapp bedeckt ist. Aufkochen und auf kleiner Stufe halb zugedeckt 45 Minuten k\u00f6cheln. Leicht ausk\u00fchlen lassen, das Fleisch vom Knochen l\u00f6sen und auseinander pullen.\r\n\r\nButter schmelzen und leicht br\u00e4unen, von der abgesetzten Molke trennen und leicht ausk\u00fchlen lassen (Beurre noisette). Die Haseln\u00fcsse grob brechen und mit den Emmentalerw\u00fcrfel in die braune Butter geben.\r\n\r\nAnrichten: Das gepullte Fleisch mit Gem\u00fcse und etwas Saft erhitzen und zwischen den gekochten und erw\u00e4rmten Teigbl\u00e4tter anrichten.
