Despu\u00e9s pela los esp\u00e1rragos por el tercio inferior y c\u00f3rtalos en trozos de 3 cm de largo. Incorpora los esp\u00e1rragos cortados en el caldo y cu\u00e9celos a fuego lento y tapados durante unos 10 minutos, hasta que est\u00e9n blandos.\r\n\r\nAbre las tapitas de los volovanes y col\u00f3calos sobre una bandeja para horno. Despu\u00e9s m\u00e9telos en el horno y cali\u00e9ntalo a 180 grados (en horno cl\u00e1sico o bien a 160 grados en horno de convecci\u00f3n), durante aproximadamente 10 minutos.\r\n\r\nMientras tanto puedes colar los esp\u00e1rragos con una coladera, recogiendo el caldo en un recipiente. Separa aproximadamente un tercio (a ser posible el tercio inferior) de los esp\u00e1rragos, m\u00e9zclalos con el reques\u00f3n, la sidra y el queso Emmentaler AOP (D.O.P.) y pasa la mezcla por el pasapur\u00e9. A\u00f1ade poco a poco el caldo de los esp\u00e1rragos, hasta que obtengas una salsa bien espesa.\r\n\r\nSeguidamente, cuece el pur\u00e9 removi\u00e9ndolo con un cuchar\u00f3n y saz\u00f3nalo con sal y pimienta. A\u00f1ade los dem\u00e1s esp\u00e1rragos y calienta la salsa unos segundos.
