Pica la cebolla y la zanahoria en daditos y reh\u00f3galas en una sart\u00e9n grande con aceite. A\u00f1ade los tomates y cuece a fuego lento durante 30 minutos. Agrega 2-3 hojas de albahaca picadas y pasa la salsa por el pasapur\u00e9. Echa un poquito de sal y pimienta.\r\n\r\nMientras que cuece la salsa puedes preparar los \u00f1oquis. Para ello, ralla el queso Emmentaler AOP (D.O.P.) con un rallador fino y m\u00e9zclalo bien con el queso ricota, sal, pimienta, una pizca de nuez moscada y 180 g de harina en un cuenco grande. A\u00f1ade harina hasta que obtengas una masa uniforme.\r\n\r\nPara preparar los \u00f1oquis: calienta una olla de agua con sal. Prepara una superficie plana y lisa y espolvorea un poco de harina. Haz rollitos de masa de un dedo de ancho y c\u00f3rtalos en trocitos de 1-2 cm. Procede echando los \u00f1oquis en el agua hirviendo y d\u00e9jalos que cuezan.
