Mientras tanto corta el puerro en aros finos y el apio nabo y las zanahorias en daditos peque\u00f1os. Pica la cebolla fina y corta los champi\u00f1ones en rodajitas de 5 mm de espesor. Despu\u00e9s, calienta el aceite en una sart\u00e9n grande y fr\u00ede los champi\u00f1ones a fuego medio alto. A\u00f1ade la verdura y las setas escurridas y reh\u00f3galo a fuego medio durante 5 minutos. Agrega el pur\u00e9 de tomate y el caldo. Salpica el sofrito con unas hojitas de tomillo y cuece unos 5-7 minutos a fuego lento.\r\n\r\nDespu\u00e9s, ralla el queso Emmentaler AOP con el rallador fino, \u00e9chalo en un cuenco y m\u00e9zclalo con la harina, la levadura en polvo y la sal. Corta la mantequilla en trocitos y a\u00f1\u00e1delos.
