Cuece la verdura en la sart\u00e9n tapada hasta que est\u00e9n casi blandos, y despu\u00e9s deja que se enfr\u00ede.\r\n\r\nPica el resto de las verduras y la cebolla chalota y fr\u00edelo con la mantequilla que te ha sobrado, a\u00f1ade el vino blanco y sigue cociendo a fuego medio alto, hasta que se haya reducido a la mitad. Despu\u00e9s agrega la nata descremada, vuelve a cocer unos minutos y sazona con mostaza, sal y pimienta.\r\n\r\nAhora reparte el sofrito de verdura sobre las lonchas de queso y forma rollitos. Coloca los rollitos de queso sobre las medallitas de solomillo de ternera sazonadas y \u00e1talos con un hilo para cocinar. Por \u00faltimo, fr\u00ede los rollitos de queso a fuego medio unos 7-10 minutos en mantequilla para fre\u00edr, hasta que adquieran un aspecto dorado.\r\n\r\nVuelve a calentar la salsa unos minutos, pica el cebollino fino y a\u00f1\u00e1delo.
