Derrite la mantequilla en una sart\u00e9n, ap\u00e1rtala a un lado y agrega el resto de la leche. Mezcla la harina con un poco de sal en un cuenco, corta los tomates en trocitos y pica el perejil. Separa 2 cucharadas del queso rallado Emmentaler AOP (D.O.P.) para espolvorear el pastel. Despu\u00e9s a\u00f1ade a la harina la mitad del huevo, el queso, los tomates, el perejil y la mezcla de leche y mantequilla y amasa todos los ingredientes unos 10 minutos, hasta que obtengas una masa suave y homog\u00e9nea. Tapa el cuenco y col\u00f3calo en un lugar templado hasta que la masa doble su volumen.\r\n\r\nSeguidamente, haz una bola con una cuarta parte de la masa y col\u00f3cala sobre una bandeja con papel sulfurizado. Con el resto de la masa puedes hacer unas cuantas bolas de menor tama\u00f1o y mete la almendra en una de ellas. Ahora distribuye las bolas de masa peque\u00f1as alrededor de la bola grande y espera 20 minutos.\r\n\r\nUnta la masa con el huevo restante y roc\u00edala con queso rallado y semillas de ajonjol\u00ed.
