Ralla el queso Emmentaler AOP (D.O.P.) con el rallador fino y mezcla unos 150 g de queso, con la harina, la yema de huevo y las especias junto con las patatas. Si es necesario, a\u00f1ade m\u00e1s harina hasta que la masa no se pegue en las manos.\r\n\r\nMoldea la masa de las patatas sobre una encimera enharinada en forma de rollos de un dedo de ancho. Corta la masa en trocitos de 2 cm, forma bolitas d\u00e9jalas deslizar por el tenedor. Cuece los \u00f1oquis en agua hirviendo salada hasta que floten en la superficie. S\u00e1calos con una espumadera y col\u00f3calos en un lugar caliente.\r\n\r\nMientras que cuecen las patatas, puedes tostar los pi\u00f1ones en una sart\u00e9n sin grasa, hasta que adquieran un color dorado claro. D\u00e9jalos que se enfr\u00eden unos minutos. Mezcla la mitad de los pi\u00f1ones con el resto del queso rallado, el ajo silvestre, el aceite y el caldo de verduras y trit\u00faralo con la batidora de mano.
