Despu\u00e9s hi\u00e9rvela con el caldo de verduras y deja que cueza a fuego lento unos 15 minutos. Escurre la quinua y deja que se enfr\u00ede.\r\n\r\nPara la salsa: mezcla el aceite de colza, el vinagre de manzana y el zumo de lim\u00f3n con la mostaza y el yogur y sazona la mezcla con sal y pimienta.\r\n\r\nCorta el queso Emmentaler AOP (D.O.P.) en dados peque\u00f1os y los tallos de apio en rodajitas finas.
