Tapa la masa y d\u00e9jala reposar durante 30 minutos a temperatura ambiente, hasta que se formen peque\u00f1as burbujas.\r\n\r\nMezcla el resto de la harina con la sal y a\u00f1ade la masa preparada con el resto de agua, amas\u00e1ndola hasta que obtengas un trozo de masa compacto. Vuelve a cubrir la masa con un pa\u00f1o humedecido y d\u00e9jala reposar durante 2 horas hasta que doble su tama\u00f1o. Si prefieres, puedes meter la masa en una bolsita de congelaci\u00f3n y colocarla en la nevera durante la noche.\r\n\r\nAntes de moldear los panecillos, amasa durante unos minutos. Despu\u00e9s div\u00eddela en trozos de 70-80 gramos. Prepara una superficie plana y lisa con harina espolvoreada y moldea la masa en forma de bolas. Seguidamente, coloca las bolas separadas sobre una bandeja de horno con papel sulfurizado y haz un peque\u00f1o corte en forma de cruz sobre las bolas de masa.\r\n\r\nSalpica las bolas de masa con agua y roc\u00edalas bien con pipas de calabaza y queso Emmentaler AOP (D.O.P.) rallado. D\u00e9jalas reposar a temperatura ambiente durante 60 minutos. Mientras tanto, precalienta el horno a 220 grados.\r\n\r\nColoca los panecillos en la mitad de del horno y d\u00e9jalos que se cuezan durante 20 minutos.
