Mezcla los tomates con el ajo, las hierbas, las alcaparras y el aceite de oliva y esparce la mezcla sobre una bandeja de horno con papel sulfurizado. Mete la bandeja en la mitad del horno durante aprox. 50 minutos, hasta que se tueste ligeramente. Saca la bandeja y mezcla la mitad de los tomates con el caldo de pollo, despu\u00e9s reh\u00f3galos en una sart\u00e9n a fuego lento.\r\n\r\nA continuaci\u00f3n, cuela el arroz de espelta o el arroz integral y esc\u00farrelo bien. Mientras tanto, calienta el aceite de oliva y una cucharada de mantequilla. A\u00f1ade la cebolla y d\u00e9jala estofar durante unos minutos hasta que adquiera un aspecto transparente. Agrega la espelta o el arroz y d\u00e9jalo estofar, removi\u00e9ndolo con el cuchar\u00f3n. A\u00f1ade el caldo con los tomates y d\u00e9jalo rehogar durante 50-60 minutos. Despu\u00e9s echa el resto de la mantequilla, tapa la sart\u00e9n, ret\u00edrala de la hornilla y deja reposar durante 5 minutos.
