Corta la c\u00e1scara de la sand\u00eda hasta 5 mm y envuelve los trozos de sand\u00eda en pel\u00edcula transparente y col\u00f3calos en un lugar frio.\r\n\r\nDespu\u00e9s pela la c\u00e1scara con el pelador y c\u00f3rtala en trozos de 2 cm. Cuece el vinagre de manzana, el agua, el az\u00facar, el jengibre, la sal y las especias durante 10 minutos a fuego lento. Retira la sart\u00e9n de la hornilla y deja que se enfr\u00ede durante 30 minutos.\r\n\r\nMete los trozos de c\u00e1scara en vasos lavados en agua hirviendo y vuelve a cocer el caldo. Vierte el caldo hirviendo dentro de los vasos y ci\u00e9rralos bien. Deja que se enfr\u00ede debajo de un pa\u00f1o.
