Una vez cocido el apio vac\u00eda el caldo y separa unos 0,5 dl para despu\u00e9s. Coloca una sart\u00e9n sobre la hornilla apagada y deja rehogar el apio unos minutos, mientras que vas aplast\u00e1ndolo con un tenedor.\r\n\r\nRaspa el queso Emmentaler AOP (D.O.P.) con un rallador fino, m\u00e9zclalo con el apio ya enfriado y saz\u00f3nalo con una pizca de sal y pimienta.\r\n\r\nEstira las cintas de masa de pasta y recorta en forma de corazones de unos 10 cm. Ahora echa un pu\u00f1adito de la mezcla de verduras sobre la mitad de los corazones ravioli, unge los bordes con un poco de agua y c\u00fabrelos bien con el resto de los corazones ravioli. Seguidamente coloca los corazones ravioli sobre una hoja de papel sulfurizado que previamente has espolvoreado con harina.\r\n\r\nMezcla el caldo de verdura que separaste antes con el vino Prosecco y cu\u00e9celo a fuego lento hasta que se reduzca a la mitad.
