Cortar el esp\u00e1rrago en trozos de 3 cm de largo. Pelar los colinabos, las patatas y las zanahorias. Cortar los colinabos en forma de barritas, las patatas en rodajas y las zanahorias en ruedecillas.\r\n\r\nHervir leche, nata, sal y pimienta. Agregar la verdura y las patatas y cocer a fuego lento tapado durante unos 10 minutos, revolviendo de vez en cuando. Mezclar 100 g de Emmentaler AOP con la verdura y verter todo en un molde de gratinado. Hornear en un horno a 180 grados durante 10 minutos aproximadamente.\r\n\r\nPicar bien el perejil. Trocear las avellanas. Mezclar todo con el resto del queso, con el pan rallado y el aceite.
