Corta la cebolla y los dientes de ajo muy fino. Calienta 2 cucharadas de aceite en una olla y rehoga los calabacines, las cebollas y el ajo unos 3 minutos. Echa el caldo, tapa la olla y deja cocer durante 7-10 minutos hasta que se ablanden.<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Parte los tomates. Corta en virutas con un pelador unos 50\u00a0g de Emmentaler AOP. El resto r\u00e1llalo fino. Reserva algunas hojitas de perejil para adornar el plato. Pica fino el resto del perejil y la albahaca. Echa las hierbas arom\u00e1ticas y los calabacines y haz un pur\u00e9. Si es necesario, a\u00f1ade un poco de agua. A\u00f1ade el Emmentaler AOP rallado y condimenta con sal y pimienta.\u00a0<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Cuece los tallarines al azafr\u00e1n tal y como indique en el envase. Calienta los tomates en el resto de aceite. Sirve los tallarines despu\u00e9s de escurrirlos con la salsa y los tomates.
