Luego, corta el apio en rodajas finas de 5\u00a0mm. Calienta el aceite y rehoga la chalota y el ajo a fuego lento. A\u00f1ade el arroz y reh\u00f3galo hasta que tenga un aspecto vidrioso. Vierte el vino tinto y deja que se haga a fuego lento. Ve a\u00f1adiendo el caldo sin dejar de remover y dejar hervir otros 20\u00a0minutos. A\u00f1ade los apios cuando queden 5 minutos.<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Corta el Emmentaler AOC en peque\u00f1os dados de unos 7\u00a0mm. Divide el radicchio en cuatro partes, qu\u00edtale el tallo y c\u00f3rtalo en tiras. Carameliza el az\u00facar en una sart\u00e9n. A\u00f1ade el zumo de lim\u00f3n y aprox. 0,5\u00a0dl de agua. Deja cocer a fuego lento hasta que se disuelva el caramelo.
