Pela las peras, qu\u00edtale las pepitas y c\u00f3rtalas en dados peque\u00f1os de 5 mm. A continuaci\u00f3n, ralla grueso el Emmentaler AOP. Separa las hojitas de mejorana de los tallos. Echa el puerro, la pera, el Emmentaler AOP y la mejorana en un recipiente, y m\u00e9zclalo todo con la mostaza. Presiona un poco el relleno.\r\n\r\nSepara la yema y la clara del huevo. A continuaci\u00f3n, corta la masa de hojaldre en 8 cuadrados del mismo tama\u00f1o. Con un pincel, pinta los bordes de la masa aprox. 1 cm con clara de huevo. Distribuye el relleno en el centro de la masa. Dobla los lados en diagonal para formar un tri\u00e1ngulo y presiona bien los bordes. Bate la yema del huevo y pinta los tri\u00e1ngulos de hojaldre.\r\n\r\nLuego, col\u00f3calos en una bandeja con papel de horno. M\u00e9telos en el horno precalentado a 200\u00ba en la altura media, unos 20 minutos.
