A\u00f1ade la polenta de manera gradual, sin dejar de remover. Removiendo de vez en cuando, t\u00e1pala y deja cocer a fuego lento 30-40 minutos. Corta el Emmentaler AOC en peque\u00f1os dados de 1\u00a0cm.<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Echa las hojas de espinacas en abundante agua hirviendo con sal. En cuanto se desmoronen las espinacas, esc\u00farrelas y enfr\u00edalas con agua fr\u00eda.<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Corta las setas por la mitad o en cuatro trozos, y pica fino la cebolla. Luego, calienta aceite de oliva, fr\u00ede las setas y echa el jerez. Deja que se hagan a fuego lento durante 10 minutos hasta que casi todo el l\u00edquido se evapore. Estruja un poco las espinacas y m\u00e9zclalas con las setas. A\u00f1ade el caldo y calienta un poco. Condimenta con sal, pimienta y nuez moscada.<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Mezcla la mitad de los dados de queso con la polenta.
