Pica fino la cebolla. Rehoga la cebolla en mantequilla. Rehoga tambi\u00e9n el puerro un poco, echa el vino blanco, a\u00f1ade el caldo y d\u00e9jalo cocer durante 5 minutos. Saca la mitad del puerro con una espumadera. Echa la nata al resto del puerro y t\u00e1palo para que siga haci\u00e9ndose durante 10 minutos. A\u00f1ade el Emmentaler AOP, trit\u00faralo bien y condimenta con el zumo de lim\u00f3n, sal y pimienta. Pica fino el romero. Echa el romero y los aros de puerro a la salsa.<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Mientras se hace el puerro, cuece durante 10-15 minutos las casta\u00f1as con un poco de agua. Cuece los tallarines al dente en agua hirviendo con sal.
