Prepara las jud\u00edas. Pela las patatas y troc\u00e9alas. A fuego lento, cuece las jud\u00edas en el caldo durante 10 minutos. Luego, a\u00f1ade las patatas troceadas y deja que hierva todo unos 15 minutos hasta que se ablanden. Reserva 1 dl de caldo para la salsa, el resto se puede tirar. <\/span><span style=\"font-weight: 400;\">\r\n<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Separa las hojitas de tomillo del tallo y trocea el perejil. Echa las hierbas arom\u00e1ticas, el ajo, las semillas de girasol, el vinagre y el caldo en una vasija alta. A continuaci\u00f3n, trit\u00faralo todo con la batidora. Remueve el aceite y condimenta con sal y pimienta.<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Corta el Emmentaler AOC en dados. Luego, mezcla todos los ingredientes con el pesto.
