Luego, s\u00e1calas de la sart\u00e9n. Dora la panceta sin aceite hasta que quede crujiente y luego s\u00e1cala de la sart\u00e9n. Calienta mantequilla y aceite de oliva. Echa las patatas y fr\u00edelas a fuego fuerte durante 10-12 minutos. Luego, corta los tallos en tubos largos de 2\u00a0cm. \u00c9chalo todo con las patatas y sazona con sal y pimienta. Corta el Emmentaler AOP en dados grandes de 1 cm. Mezcla los dados de queso, las avellanas, la panceta y la mejorana con las patatas.
