Luego, expr\u00edmela. Corta la cebolla y el ajo muy fino. Si es necesario, quita las pepitas del peperoncino, y c\u00f3rtalo fino. Rehoga la cebolla, el ajo y el peperoncino en aceite. Despu\u00e9s, a\u00f1ade el pur\u00e9 de tomate, el zumo de naranja y los tomates. Deja que se haga todo a fuego lento durante 30 minutos, y condimenta con sal y pimienta.\r\n\r\nTuesta los pi\u00f1ones en una sart\u00e9n hasta que cojan un poco de color. A continuaci\u00f3n, ralla grueso el Emmentaler AOC. Echa en un recipiente el queso, la piel de naranja, los pi\u00f1ones, la carne picada, el huevo y el pan rallado. Condimenta con romero, sal y pimienta y mezcla bien.
