Cuece el caldo, a\u00f1ade los dados de patatas y verdura y las hojas de laurel. Pon la tapadera y deja cocer unos 15 minutos hasta que se ablanden.<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Ralla fino el Emmentaler AOP. Pica fino el cebollino. Remueve la maicena con la nata, \u00e9chala en la verdura y deja cocer a fuego lento 1-2 minutos. Vierte la salsa en un recipiente alto. A\u00f1ade el Emmentaler AOP y el cebollino, y tritura con la batidora.<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Vuelve a echar la salsa en la olla. A\u00f1ade el vinagre y condimenta con sal y pimienta.<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Derrite mantequilla en la sart\u00e9n y fr\u00ede el huevo.
