Reserva los aros verdes. Rehoga el resto de la cebolleta en aceite caliente. A\u00f1ade el arroz y reh\u00f3galo un poco. Incorpora el vino de manzana y remueve el caldo de vez en cuando. Deja cocer el arroz a fuego lento unos 20 minutos, sin dejar de remover.\u00a0<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Mientras se cuece el arroz, prepara los esp\u00e1rragos y pela el tercio inferior. Luego, c\u00f3rtalos en trozos peque\u00f1os. Cu\u00e9celos al vapor o en agua hirviendo con sal durante 5-10 minutos hasta que queden crujientes.\u00a0<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Trocea las avellanas y d\u00f3ralas un poco en la sart\u00e9n. Ralla fino el Rahmtaler.\u00a0<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Echa los esp\u00e1rragos, las cebolletas, la crema agria y el Rahmtaler en el risotto y condimenta con sal y pimienta.
