Parte las uvas por la mitad y trocea las bayas de enebro.<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Para la salsa, derrite mantequilla en una olla peque\u00f1a y rehoga las uvas y las bayas de enebro brevemente. Echa el jerez y deja que reduzca un poco. Mezcla la maicena con el fondo de carne, \u00e9chala en la salsa y deja cocer 1-2 minutos, sin dejar de remover. Separa el tomillo del tallo, a\u00f1\u00e1delo y condimenta la salsa con sal y pimienta.<\/span>\r\n\r\n<span style=\"font-weight: 400;\">A continuaci\u00f3n, calienta la mantequilla. Condimenta la carne con sal y pimienta y d\u00f3rala a fuego fuerte, 30 segundos por una cara, y 1 minuto por otra. Retira la sart\u00e9n del fuego y baja la temperatura. Cubre el bistec con una loncha de queso. Presta atenci\u00f3n a que el lado menos tostado quede en la parte de abajo. Tapa la sart\u00e9n y pon los bistecs otros 3-5 minutos m\u00e1s.
