A\u00f1ade la leche poco a poco, sigue removiendo y lleva a ebullici\u00f3n. Remueve hasta que la salsa quede ligada. D\u00e9jala a fuego lento durante 4-5\u00a0minutos. Condimenta con sal y nuez moscada.<\/span>\r\n\r\n<span style=\"font-weight: 400;\">El queso Emmentaler AOP debe comprarse en una pieza para que no se seque ni pierda el aroma. Precalienta el horno a 210\u00a0\u00baC. Unta un lado de las rebanadas de pan con mostaza y, luego, con una capa fina de bechamel. Esparce por encima 40\u00a0g de Emmentaler AOP. Coloca 4\u00a0rebanadas con la salsa hacia arriba sobre una bandeja cubierta con papel de horno. A\u00f1ade el jam\u00f3n cocido y la mitad del Emmentaler AOP. Cubre con el resto de rebanadas (con la salsa hacia abajo) y esparce el resto de Emmentaler AOP. Hornea en la parte central del horno durante 10-15 minutos.<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Consejos: para una raci\u00f3n puedes preparar el croque-monsieur en la sart\u00e9n.
