Reh\u00f3galos con una cucharada de aceite. A\u00f1ade el arroz y reh\u00f3galo tambi\u00e9n un poco. Ve a\u00f1adiendo el caldo caliente poco a poco y deja hervir unos 20\u00a0minutos removiendo de vez en cuando.\r\n\r\nRalla fino el Emmentaler AOP y m\u00e9zclalo con el arroz. Condimenta con sal y pimienta. Extiende el risotto en un papel de horno, observa que tenga un grosor de 2-3 cm y deja que se enfr\u00ede.\r\n\r\nCorta las verduras en trozos peque\u00f1os. Con un molde para cortar redondo, corta la masa de risotto. D\u00f3ralo por ambos lados en el resto del aceite durante 2-3\u00a0minutos y conserva en caliente.\r\n\r\nRehoga la verdura en mantequilla y echa el verm\u00fa. A\u00f1ade el caldo, ponle una tapadera y cu\u00e9cela hasta que est\u00e9 blanda. A\u00f1ade la nata y termina de cocer sin la tapadera. Ralla un poco de c\u00e1scara de lim\u00f3n y condimenta con un poco de zumo de lim\u00f3n, sal y pimienta. Separa las hojitas del perifollo y espolvorea las verduras con la pimienta rosa.
