Trocea la coliflor y haz un arroz de coliflor con ayuda de un mortero. <\/span><span style=\"font-weight: 400;\">Mezcla el arroz de coliflor, los huevos, el Emmentaler AOP, la harina de almendra y la de coco en un recipiente grande.\u00a0<\/span><span style=\"font-weight: 400;\">A\u00f1ade la levadura en polvo, las hierbas provenzales y la sal. Luego, coloca papel de horno en una bandeja. Haz 8 bolas con la masa y presiona para que queden planas, con un grosor de unos 2\u00a0cm y 7 cm de di\u00e1metro. Las ruedas deben ser compactas. Espolvorea con s\u00e9samo y m\u00e9telas en el horno precalentado. Despu\u00e9s de 20-25\u00a0minutos en el horno, deja que se enfr\u00eden. Cubre los bollitos con lonchas de Emmentaler AOP y un cuarto de higo cada uno.
