Corta fina la cebolla y reh\u00f3gala junto con las setas en mantequilla caliente. A\u00f1ade el caldo y la leche, deja cocer, y a\u00f1ade la polenta sin dejar de remover. Deja que hierva a fuego lento y remueve de vez en cuando. Mezcla el Emmentaler AOP con la polenta y condimenta con sal y pimienta.<\/span>\r\n\r\n<span style=\"font-weight: 400;\">Pica la chalota muy fina. Condimenta el solomillo con sal, pimienta y tomillo, y dale una vuelta en la sart\u00e9n en aceite caliente. Col\u00f3calo en una rejilla de cocina y m\u00e9telo en el horno precalentado a 150\u00ba unos 15 minutos. Mezcla las chalotas con az\u00facar y harina y \u00e9chalas en la olla ligeramente enfriada. Rehoga a fuego medio. Ve a\u00f1adiendo vino tinto poco a poco y deja que reduzca.
