S\u00e1calas con una espumadera y d\u00e9jalas en agua fr\u00eda. Luego, ponlas en un pa\u00f1o de cocina y s\u00e9calas con golpecitos. Corta los nervios de las hojas.\r\n\r\nDespu\u00e9s, corta el Emmentaler AOP en 8 lonchas gruesas de m\u00e1s o menos 1 cm, con un tama\u00f1o aproximado de 7 x 4 cm. Cubre las hojas con un tomate cada una. Distribuye las lonchas de queso por encima. Pliega las hojas de col de forma transversal y enr\u00f3llalas fuerte. Presiona para que quede un poco plano.\r\n\r\nA continuaci\u00f3n, bate los huevos. Luego, pasa los paquetitos de col por harina, despu\u00e9s por huevo y, al final, por pan rallado. Presiona bien el empanado.\r\n\r\nCalienta aceite en una sart\u00e9n grande y fr\u00ede los paquetitos de col a fuego medio 5 minutos cada uno.
